One Pot Leftover Turkey Stroganoff

I don’t know about you but after a week of Thanksgiving leftovers I’m ready to call FOUL!  We’ve had turkey every day for a week and it’s time to let that bird fly the coop!
I’m tired of turkey and done with cooking so when I came across a similar “one pot” meal on the internet, I knew I could muster up the oomph to use up the last of that big ole bird.One Pot Leftover Turkey Stroganoff

**Disclaimer** I very rarely measure anything when I’m cooking. I eyeball things. Start with less seasoning than you think you need. You can always add more, but you can’t take it out! Get comfortable in the kitchen, trust your senses and your taste-buds. If you don’t like a spice I use, omit it and use something else! Be brave, be BOLD & take charge of your culinary adventure!

Start with the leftovers

Leftover turkey breast, pasta, garlic, chicken broth, parmesan cheese and butter

Chopped cooked turkey

Chop turkey into large chunks, it’ll break down a bit in the cooking process. Sautee in olive oil and butter until golden brown

Add chopped garlic when turkey has browned. Sautee for just a couple minutes

Add Chicken Broth and worcestershire

Add chicken broth, Worcestershire sauce (about 3 tablespoons?), pepper, onion powder, paprika and any other spices you like. Go easy on the salt because the broth, Worcestershire both have sodium. You can always adjust the seasoning later

Pasta in the Pot

Bring the broth to a boil and add in the pasta. Cook until nearly al dente then remove from heat.

Turkey pasta cheese greek yogurt sour cream cheese

Stir in a cup of sour cream, a cup of plain Greek yogurt and grated parmesan. Taste and adjust seasoning as necessary.

Turkey Stroganoff

Plate and enjoy!

I hope you enjoy this leftover recipe as much as we did. Next time we try this, I’m going to add sliced mushrooms for a more authentic stroganoff feel.
