Tried it Tuesday-Crock Pot edition with Red Fork

Ok, I know, I know, everyone and their cousin’s granny’s aunties have been gushing about how phenomenal their lives are now that they’ve got an Instant Pot in their culinary arsenal and I won’t lie, I REALLY want one too, but I simply can’t justify the cost when with a little planning and forethought, my crockpot is just as good.

I’ve been on the hunt (again) for ways to simplify and cut down on expense and time in the kitchen. I’ve been eyeing those meal services, subscription meat boxes and produce delivery companies and to tell you the truth…they ALL look amazing until I see the “confirm purchase” button. I have a really hard time with biting the bullet on the unfamiliar. Especially when it comes with a hefty price tag. Before anyone tries to throw all the math in my face, yes, I do realize that some of these services are VERY reasonable when you break it down to the “per meal” price, but please keep this in mind- I’m a single mom with one income and bills to pay (I know- me and every other single mom on the planet) so while it may be very cost effective in the long run, it’s the chunk of money NOW that usually trips me up. It won’t always be like this, but while it is…I can only do the best I can.

On my last trip to Aldi, while I was picking up the necessities for the week I came across this little gem. IIRC, it was less than $2. I could recognize AND pronounce all of the ingredients! 

This morning, I tossed 3 good sized chicken breasts into my trusty crockpot (No, I’m not worried that it’ll burn my house down a la ‘This Is Us’), poured this over it and left in on LOW until we got home. 

I shredded the chicken and added a can of white beans. These are what I had so I rinsed them before adding them to the chicken.

I served this over angel hair pasta and sprinkled with parmesan.
Things I learned today:

  1. 3 chicken breasts were definitely too much. The meat to sauce ratio was way off. The chicken was moist, but it wasn’t saucy enough over the noodles. Next time only 2 chicken breasts or use another pouch of sauce.
  2. Season additional components. The beans were a delicious idea, but it was pretty bland.
  3. I still want an Instant Pot, but I’m really in love with my crock pot!
