Eggplant Parm..sort of

I can’t believe someone actually asked for a recipe! That’s both flattering and frightening at the same time! I’ve always been the “throw a little of this and a bit of that and cook it till it looks done” type of cook. That’s how my step-mom taught me and it’s only failed me ONCE in all my 30+ years of cooking. (Baking is an entirely different beast- I measure EVERYTHING when I bake)

I’m actually going to make this again tonight so I will try to remember step by step photos- no promises though!!

Here we go:

With eggplant, you want to have everything ready to go before you slice it because it WILL turn an ugly unappetizing shade of brown if you don’t do something with it right away.
Beat two eggs in a shallow bowl.
Mix one package of shake ‘n bake (what ever your fave is) with some seasoned bread crumbs.
Get a big flat bottomed frying pan and turn on the stove to a medium-ish heat. You want it hot but you don’t want your oil of choice smokin.’ In this case I used a mix of bacon fat and olive oil.
Slice your eggplant into rounds, try to make them as even as possible so they cook at the same rate.
Sprinkle each round (both sides) with salt and pepper- something I totally forgot to do this time!
Dunk the rounds one at a time into the beaten egg, then the breadvcrumb mix then into the frying pan. When they are a pretty golden brown color, flip ’em. When the other side is pretty take them out of the pan and set them aside on a cooling rack on a cookie sheet.
When they’re all cooked, it’s assembly time.
**WARNING** DO NOT — USE YOUR SERVING PLATES FOR THE NEXT STEP!!! EVEN IF IT SAYS OVEN SAFE-THE BROIL SETTING IS MUCH HOTTER THAN YOUR PLATES CAN TOLERATE!!!
Luckily I only broke ONE plate doing this- like a dumbass!

Put a dollup/spoonfull of your favorite sauce on each round, sprinkle with cheese-this photo is doctored up jarred sauce and pre-shredded Italian blend cheese.
Place under the broiler DO NOT WALK AWAY when the cheese is pretty and brown and bubbly, yank those bad boys out of the oven, slap ’em on a plate and shove ’em in your face hole!

      I have to say it was delish. Hubby took some to work the next day and shared with a couple coworkers- they asked if when I make it again could I make more so he can share with them again!
      So, tonight, I’m cooking up a double batch!
